Easy Homemade Zucchini Soup

Most of the time, when you think of zucchini, you don’t think of soup – you think of a green vegetable that you may or may not want to eat. After all, it sure doesn’t fit in with a meat and potatoes diet, and it’s not something you would want on a pizza, right? But, you might want to rethink that if you are trying to eat healthy. Homemade zucchini soup might be just what the doctor ordered.

Let’s take a look at what the zucchini can do for you: It has plenty of vitamins, it’s low in calories and low in carbohydrates, it’s packed with fiber (it will definitely clean you out) and it actually tastes good if you prepare it right – which isn’t hard because it’s good raw, on the grill, steamed or in home-made soups.

But you sure don’t see a lot of zucchini soups on the shelf in the supermarket, do you? That’s because most of what is healthy either has to be purchased in a health food store or better yet, made by you at home. Here’s a good simple zucchini soup recipe that will likely surprise you with taste and ease of preparation:

Easy Homemade Zucchini Soup

Slice up 4 medium or 3 large zucchini into quarter inch slices into a 2.5l pot. Peel and chop one large onion add it to the pot along with 1/4 cup of butter. Cover the pot and cook the zucchini and onion in the butter until tender.

TIP: Put the onion in the refrigerator until cold before slicing. This will reduce the tearing effect that comes with chopping onions. If you do tear up, stick your head in the freezer for a few seconds and it will stop the sensation (that's not a joke - open the door to the freezer and let the cold air hit your eyes).

When that's about done cooking, add one can of cream of chicken soup and 1 soup can full of water into blender and blend those together until they are smooth.

Next, add the cooked zucchini mixture into the blender and add 1/2 teaspoon of sweet basil and enough salt to please your palate. Blend them well, then put them back on the stove to heat them up a little bit more. The soup is now ready for the taste bud test.

There’s nothing like a good homemade zucchini soup to put some variety and fiber in your diet. This soup will show you why it’s worth experimenting with different soups and trying new things.
