Moms and Grandmas have always said
that chicken soup was a great meal when you have a cold or the flu. But,
the good news is, you don’t have to wait until you’re ailing to enjoy a
piping hot bowl of homemade chicken noodle soup.
Chicken noodle soup goes well as a light meal by itself or with some
crackers, or goes especially well with a good sandwich. This hearty soup
should satisfy even the hungriest of souls.
It should take you about 30 minutes to put together, unless you buy
pre-chopped vegetables, and about 45 minutes of cooking time.
Hearty Homemade Chunky Chicken Noodle Soup
2 teaspoons of olive oil
1 cup of chopped onion
1 cup of diced carrot
1 cup of sliced celery
2 teaspoons of powdered garlic
3 tablespoons of flour
½ teaspoon of dried oregano
¼ teaspoon of thyme
¼ teaspoon of poultry seasoning
3 x 400g cans of chicken broth
3 cups of peeled diced boiled potato (boil until tender but not mushy)
½ teaspoon of salt
2 cups of diced roasted chicken (canned chicken is easier but not as
tasty)
350g of evaporated milk
100g uncooked wide egg noodles
Over medium heat, heat the olive oil then add the onion, carrot, celery
and garlic and sauté for 5 minutes. Sprinkle the flour, oregano, thyme
and poultry seasoning into the pot of vegetables and cook for a minute.
Now, stir in the broth, potatoes and salt. Bring to a boil then drop to
a simmer partially covered for 25 minutes or until the potatoes are
tender.
Next, add the chicken, the evaporated milk, and the noodles and cook 10
more minutes or until the noodles are tender. Garnish with thyme sprigs,
parsley or whatever you like if preferred.
This homemade chicken noodle soup is a hearty soup, but it’s even more
enjoyable with a nice sandwich – maybe a tuna sandwich or even a grilled
cheese sandwich. Enjoy.
